We wouldn't be a "Muffin Revolution" if we just made a regular old lemon poppyseed muffin. So, we swapped the poppyseeds for chia seeds and added little flecks of bright green zucchini! For those watching their carbs and sugar intake, this muffin is the lowest in carbs of any of our muffins boasting a mere 5g of sugar and only 13g of total carbs in one, whole muffin.
